Roll out pastry on a floured surface.
Place two teaspoons of the potato and cheese mixture in the centre of the pastry.
Fold the pastry over the filling and make a triangle shape.
Press the edges of the pastry with a fork to seal.
Heat oil to 180°C and deep fry the samosas, a few at a time, until golden brown.
